Cluster beans stir fry

Cluster beans fry is something I love a lot, mainly because we don't see many people making it often. Anyway, my mom makes it this way, and now I do too. 

Buy some 400 grams of cluster beans for starters. 

Cut and discard the top and bottom portion of cluster beans. The best part about cluster beans is that you can do all this cutting with just your fingers.

The rest can be cut into any size you want.

Cooking time: 25 minutes

In a pan, heat up some oil (I use gingelly oil / til oil), put a spoon of mustard, let them splatter and after a minute, add urad dal. Urad dal is necessary for the finished product to be crispy. 

Pls do not add any chillies or any other dal.



Once urad dal turns golden in colour, add cluster beans and stir for 5 minutes. 

Add the required amount of salt you desire, then close it with a lid with a small gap, and keep stirring for 10 more minutes. Keep removing the lid and stir every now and then.

If the curry is getting burnt, you can lower the heat source.

Add 3 spoons of besan (gram flour). Add sambar powder and chilli powder as per your wish. I added only sambar powder, 3 spoons of it. Stir for 5 minutes. The curry might look dry. Add a teaspoon of oil and let it fry. 

Once it is fried to a decent limit, add one cup of water, mix it and close with a lid. Keep removing the lid and stir every now and then for 10 minutes.

You're all set. Mix it with rice for lunch or wheat rava for breakfast or have it as an evening snack!
